Literally - smoked meat. It's not the 4th of July party you hold in your back yard. It's meat that is slow cooked over an indirect wood fire at a low temperature. If you are cooking burgers over a flame, you are grilling. We smoke our meats using hardwood lump charcoal and a combination of apple and cherry wood.
Our own. We don't limit ourselves to any particular style or region. We just like to make and serve the best BBQ we can. The best meat, coated in a perfect blend of seasonings ("the rub"), and slow smoked over a low temperature wood fire is our basic formula.

Lightly smokey, juicy, mouth watering, melt in your mouth tender is our style.
If you've seen our trailer, you've seen the smokers. We have two smokers on board the trailer and smoke everything fresh. In fact, all of our sides and sauces are made from scratch and fresh by us as well!
When we get ready for an event, we have to do our best calculating and guessing about what to make. What you like varies based on region, weather, the type of event, and more. We also have to consider how many of you are coming to an event and what other food will be there. Most of the time, we get it right.

Remember, the better the bbq, the more it will sell out. It frustrates us to sell out, but we know that to serve the best barbeque, we need to do things right. We cannot take shortcuts. Great bbq is ready when it's ready. We don't use tricks to get meats done faster. Faster is not always better.

Since we cook everything fresh and from scratch, it takes a long time. We don't want to give you something that is not our absolute best. We hope you understand the love and care we put into our product.
We freeze the leftovers at the end of each event, and every couple of weeks, we cater lunch for a local school staff. We like to give back to our community, and have chosen to do so through education. You can read more about how we give back here.
On the table! Sauce is personal - some people automatically reach for the sauce and pour it on before tasting the bbq, and others like to try both separately to get a taste of the meaty and saucy goodness. we serve all of our meats naked so you can decide.
Absolutely! We can cater anything from a small get together, to a backyard bash, to weddings. If you can think of a reason to have great barbeque, we can help you out!
